Quiche is not exclusive to breakfast by any means. It’s also very versatile and customizable to what you already have left over or need to use up in your fridge. Try a zucchini and ham or a tomatoes and bacon combination. It’s easy to do so be careful to not overload the quiche with too many filling ingredients or the egg mixture will over flow the dish.

Ingredients

  • 1 pie crust
  • 5 eggs
  • ¼ tsp salt
  • ¼ tsp pepper
  • ¾ cup milk
  • 5 oz. feta cheese, crumbled or diced
  • 1 Tbsp sour cream
  • 1 cup cooked spinach, drained and squeezed dry
  • ½ cup sauteed mushrooms
  • 2 cloves garlic, minced
  • 1 tsp fresh dill, chopped
  • 3 Tbsp shredded Parmesan cheese

Instructions

  1. Preheat the oven to 400°F and bake the pie crust for 10 minutes.
  2. In a bowl, whisk the eggs, salt and pepper.
  3. To the same bowl, add milk, feta cheese, sour cream, spinach, mushrooms, garlic, and dill into the egg mixture.
  4. Pour the entire quiche filling into the pie crust.
  5. Sprinkle the shredded Parmesan on top and bake for 40-45 minutes at 350°F.
