This is a refreshing Korean shaved ice dessert best enjoyed in the summer. There are no rules to what fruit you can use here, just add your favorite berries, melons, and other fruit in bite-size pieces. The traditional must-haves for this is the sweetened condensed milk, sweet red bean paste (anko), and the sweet rice cake (mochi). Adding a scoop of ice cream makes this extra decadent! Make a big bowl and have everyone gather around to dig in before it melts.

Ingredients

  • 4 cups ice cubes
  • ¼ cup sweet red bean paste (anko)
  • ½ cup strawberries, chopped
  • ½ cup mango, chopped
  • ½ cup blackberries
  • ½ cup blueberries
  • ¼ cup sweet rice cake (mochi)
  • ¼ cup sweetened condensed milk
  • 2 scoops pistachio ice cream

Instructions

  1. Shave the ice cubes using an ice shaving machine, enough to fill one big bowl or many individual serving bowls.
  2. Spoon the adzuki beans on top of the shaved ice in the middle.
  3. Place fruit and mochi toppings around the adzuki beans.
  4. Drizzle sweetened condensed milk over the fruit and adzuki beans.
  5. Top with vanilla ice cream or any flavor ice cream that you think would go well with the combination of fruit you’ve used.
