These cauliflower fritters are crispy, slightly cheesy, and a great alternative to french fries, hash browns, or tater tots. We actually enjoy it as a side to meatloaf in place of mashed potatoes. Our favorite topping is a dollop of sour cream but it’s great with ketchup too!
Ingredients
- 4 cups riced cauliflower (thawed if frozen)
- ⅓ cup shredded Monterey jack cheese
- 3 cloves garlic, minced
- 3 Tbsp scallions, minced
- 1 Tbsp dried parsley
- 3 eggs, beaten
- ½ cup all purpose flour
- 2 tsp salt
- 1 tsp black pepper
- ¼ cup of olive oil
Instructions
- Preheat the oven to 425°F. Line sheet pan with parchment paper and lightly coat with cooking spray.
- Mix cauliflower, Monterey jack cheese, garlic, scallions, dried parsley, and eggs until well combined.
- Add flour, salt, and black pepper to the mixture until well blended.
- Drop 2 heaping tablespoonfuls of mixture onto parchment paper, flatten and pat down with the back of the spoon while forming an oval shape.
- Lightly brush olive oil on the tops of each fritter and bake for 15 minutes (halfway through).
- After the first 15 minutes, take the pan out of the oven, flip each fritter over, and lightly brush on more olive oil on the new side.
- Bake for another 15 minutes or until golden and crispy edges.
