Omurice is a popular comfort food and a cherished home-cooked meal in Japan. It’s basically fried rice wrapped in a thin omelet with a must-have drizzle of ketchup. Omurice is easily customizable by using your choice of vegetables and meat or seafood. This recipe is an ovo-vegetarian version with only vegetables in the fried rice.
Ingredients
For the fried rice
- 2 Tbsp olive oil
- ½ cup yellow onion, diced
- ¼ cup carrots, diced
- ½ cup mushrooms, chopped
- 2 Tbsp ketchup
- 1 Tbsp soy sauce
- 2 cups cooked white rice (preferably left-over from the day before)
- ¼ cup green onions, chopped
For the omelet and topping
- 4 eggs
- 2 Tbsp water
- Olive oil cooking spray
- Ketchup to drizzle on top
Instructions
For the fried rice
- If using leftover rice, warm slightly in the microwave so it’s not so hard and put aside for later.
- If using fresh cooked rice, set aside to cool down so it’s not so wet and sticky when it’s eventually added to the pan.
- Add olive oil to a warm pan and saute just the onion and carrots for the first few minutes and then add the mushrooms.
- Mix ketchup and soy sauce to the sauteed vegetables.
- Carefully add the cooked white rice to the pan with the vegetables and combine well.
- Add a small amount of olive oil if rice is sticking to the pan.
- Turn off the heat and add the green onions to the pan with the fried rice and mix to combine. Remove from heat and set aside while making the omelet.
For the omelet
- Whisk the eggs and water in a bowl until you see bubbles and slight foaming.
- Warm up a non-stick pan on low-medium heat and coat with olive oil cooking spray.
- Pour half of the egg mixture in the pan and cover with a clear lid, cooking like this for 4-5 minutes or until the top of the omelet looks mostly cooked. Make sure the bottom of the omelet is not cooking too quickly and browning (adjust heat as needed).
- Once the omelet is cooked and ready, add half of the fried rice on top of the omelet slightly off-center towards the right side.
- Gently start folding the left side of the omelet over the fried rice with a spatula while lifting the pan and tilting it towards a plate to slide the entire omelet and fried rice off the pan.
- Serve the omurice with a drizzle of ketchup.
