This slaw or coleslaw is mayo-free, light, and refreshing. It’s one of my favorite salads because it goes well with so many different meals. Consider having it on the side with enchiladas, on top of fish tacos, or with shredded BBQ chicken sandwiches. It’s not overly spicy but this can of course be adjusted to your preference.

Ingredients

For the spicy cumin lime vinaigrette

  • ¼ cup lime juice
  • ½ tsp cumin
  • 2 cloves garlic, minced
  • 1 tsp honey
  • 3 tsp Sriracha sauce
  • ½ tsp salt
  • ½ tsp black pepper
  • ⅓ cup olive oil

For the slaw mix

  • 1 bag shredded cabbage mix
  • ½ cup carrots, julienned
  • ¼ cup green onions, chopped
  • ¼ cup cilantro, chopped

Instructions

For the spicy cumin lime vinaigrette

  1. Combine lime juice, cumin, garlic, honey, sriracha sauce, salt, black pepper, and olive oil in a jar and let it chill in the fridge overnight.

For the slaw

  1. Combine the shredded cabbage, carrots, green onions, and cilantro in a bowl.
  2. Drizzle and mix the vinaigrette with the vegetables right before serving.
