This is a simple and healthy snack by itself or may compliment a meal as a side dish. It is slightly sweet but the olive oil, salt and pepper give it a great savory flavor. You may rinse, dry, and save the seeds for later to roast as well.

Ingredients

  • 1 Kabocha
  • 1 Tbsp olive oil
  • Salt and pepper to taste

Directions

1. Preheat oven to 400° F and line baking sheet with aluminum foil.
2. Cut the Kabocha in half and scoop out the soft inside with seeds.
3. Cut the rest of the Kabocha into ½ inch thickness or less.
4. Throw Kabocha slices into a bowl with olive oil, salt, and pepper.
5. Bake for 40 minutes or until desired crispiness.
