Consider this a fancy baked potato with an extra crispy and cheesy outside. Enjoy with your favorite toppings.

Ingredients

  • 4 medium Russet potatoes
  • 2 tsp olive oil
  • 1 Tbsp butter
  • 1 Tbsp grated Parmesan cheese
  • salt and pepper to taste
  • ½ cup sour cream
  • 4 bacon slices, baked and chopped
  • 3 green onions or chives, chopped
  • ½ cup sharp cheddar cheese, grated

Instructions

  1. Preheat the oven to 400 ° F. Prepare sheet pan lined with aluminum foil.
  2. Clean Russet potatoes under cold running water to get rid of dirt from the skin. Leaving skin on, cut potatoes in half lengthwise.
  3. Drizzle olive oil on the sheet pan and place potatoes cut side down.
  4. Spread butter on the potato skin, sprinkle grated Parmesan cheese, salt and pepper on top.
  5. Bake for 30 minutes.
  6. Top with a couple spoonfuls of sour cream, chopped bacon, green onion, and cheddar cheese.
