Consider this a fancy baked potato with an extra crispy and cheesy outside. Enjoy with your favorite toppings.
Ingredients
- 4 medium Russet potatoes
- 2 tsp olive oil
- 1 Tbsp butter
- 1 Tbsp grated Parmesan cheese
- salt and pepper to taste
- ½ cup sour cream
- 4 bacon slices, baked and chopped
- 3 green onions or chives, chopped
- ½ cup sharp cheddar cheese, grated
Instructions
- Preheat the oven to 400 ° F. Prepare sheet pan lined with aluminum foil.
- Clean Russet potatoes under cold running water to get rid of dirt from the skin. Leaving skin on, cut potatoes in half lengthwise.
- Drizzle olive oil on the sheet pan and place potatoes cut side down.
- Spread butter on the potato skin, sprinkle grated Parmesan cheese, salt and pepper on top.
- Bake for 30 minutes.
- Top with a couple spoonfuls of sour cream, chopped bacon, green onion, and cheddar cheese.
