There are so many ways to make meatloaf and it’s hard to go wrong with a lot of the recipes out there. I enjoy being able to make different versions of meatloaf, sometimes I want the traditional meat loaf topped with a ketchup glaze or change it up with our favorite BBQ sauce. However, this one is extra fancy and is one of my favorites because of the brown gravy!

Ingredients

For the meatloaf

  • 2 pounds ground beef
  • 1 Tbsp olive oil
  • 1 cup diced onions
  • 1 tsp kosher salt
  • ½ tsp black pepper
  • 3 cloves garlic, minced
  • ½ Tbsp dried thyme
  • 1 Tbsp ketchup
  • 1 Tbsp Worcestershire sauce
  • ¼ cup chicken broth
  • 1 cup breadcrumbs
  • 2 eggs, beaten

For the brown gravy

  • 2 tsp olive oil
  • ½ cup chopped mushrooms
  • ½ cup chopped onions
  • 1 tsp garlic powder
  • 2 tsp dried parsley
  • 1 tsp Worcestershire sauce
  • 3 cups beef broth (used 2 tsp of Better Than Bouillon beef base)
  • salt and pepper to taste
  • ¼ cup of water mixed with 3 tablespoons of cornstarch

Instructions

For the meatloaf

  1. Preheat the oven to 350°F. Line a sheet pan with aluminum foil and coat with cooking spray.
  2. Add the olive oil to a skillet over medium heat and cook onions, seasoning with salt and pepper as onions start to carmelize.
  3. Add the garlic, stir and cook for a minute longer, then add the thyme, ketchup and Worcestershire sauce.
  4. Pour in the chicken broth and stir, deglazing pan. Let the chicken broth reduce for 3-4 minutes then turn the heat off and remove the skillet from the burner to cool.
  5. To a large bowl, add the ground beef along with the eggs and breadcrumbs. Once the onion mixture has cooled, add it to the bowl with the meat and mix to combine.
  6. Form the meat into a loaf shape on the sheet pan and place in the oven.
  7. Cook the meatloaf for 45-55 minutes.
  8. Make the brown gravy while meatloaf is in the oven (see instruction below)
  9. When the meatloaf comes out of the oven you can pour the gravy over the top of the meatloaf or slice the meatloaf and serve the gravy on the side.

For the brown gravy

  1. To saucepan, add olive oil and cook mushroom and onions until just starting to brown and caramelize.
  2. Add garlic powder, dried parsley, salt, pepper, and Worcestershire sauce to mushrooms and onions.
  3. Pour in beef broth and bring to boil while stirring.
  4. Add the cornstarch mixture while whisking to prevent any lumps.
  5. Bring the gravy back to a boil, then turn down to a simmer and cook for 3-4 minutes.
